Perfect crispy-tender cauliflower with golden edges. This recipe uses a high-heat sear-and-roast method to guarantee a crunchy exterior and a tender, flavorful middle, seasoned perfectly with curry powder.

  • 23 tablespoons (30-45ml) avocado oil, divided
  • 1 teaspoon sea salt
  • 1 tablespoon curry powder
  • ½ teaspoon maple syrup (optional)

  • Fresh cilantro
  • Toasted almonds
  • Tahini drizzle

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Cut cauliflower into even-sized florets.
  3. Toss with 1 tablespoon oil, salt, curry powder, maple syrup.
  4. Heat skillet with remaining oil until very hot.
  5. Sear cauliflower 5 minutes until golden.
  6. Transfer to oven, roast 10-15 minutes.
  7. Stir every 5 minutes until crispy.
  8. Garnish and serve immediately.
