For the Cobbler Batter

  • 1/3 cup unsalted butter, melted
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 1/2 cups brown sugar, packed
  • 1 1/2 cups hot water

For the Topping

  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F. Spread the melted butter evenly in a 9×13 baking pan.
  2. In a large bowl, whisk together the milk, vanilla, and sugar.
  3. Add the flour, baking powder, salt, and cinnamon to the wet ingredients; whisk until just combined into a batter.
  4. Spoon the batter gently and evenly over the melted butter in the pan, being careful not to mix the layers.
  5. Sprinkle the packed brown sugar evenly over the entire layer of batter.
  6. Gently pour the hot water over the batter and sugar.
  7. Bake for 30-35 minutes until the cobbler is golden brown and mostly set in the center.
  8. While the cobbler is still hot, mix the topping sugar and cinnamon together in a small bowl.
  9. Sprinkle the cinnamon-sugar topping evenly over the hot cobbler.
  10. Let the cobbler cool slightly before serving for the best texture.

Notes

Serving: Best served warm with a generous scoop of vanilla ice cream or a dollop of whipped cream.

Storage: Store the cobbler covered in the refrigerator for up to 4 days. It can also be frozen for up to 2 months; thaw before reheating.
